CHEF HAIKAL SUPPORTS LOCAL FARMS FOR SUSTAINABILITY AS A NATION

In our second edition of Taste & Dine, we collaborate with Chef Haikal Johari, Executive Chef at Michelin-starred Alma by Juan Amador to feature local produce by Backyard Productions’ farm partners in a lunch menu. In this short chat with Chef Haikal, we speak to him about sourcing for produce locally and the challenges he has faced.

Chef, please share with us some of your thoughts on the ingredients you use at Alma and using homegrown produce.

The cuisine at Alma is very product driven, we source our ingredients from all over the world. Since returning to Singapore 5 years ago, I have always wanted to incorporate local produce in Alma’s menu. And while I have tasted many locally grown produce, I have found that the challenge lies in the consistency of its supply. For me, that is not ok, because cooking is about being consistent every single day.

How has Backyard Productions changed your perspective on local produce?

When the pandemic happened last year and we faced a shortage in our food imports, I saw an increase of local producers coming forward to let us sample their products. Backyard Productions was one of them. What they shared with me really blew my mind! I was asking myself how could this be? The quality of the produce is superior and the variety is really what surprised me. I think that the locally produced ingredients has grown by leaps and bounds and through this pandemic, we have been keenly reminded on the importance of learning to become self sustainable as a nation.

I was also fortunate enough to meet some of the local farmers and I am shocked to see that some of them are even younger than I am! With the drive, passion and responsibility they display, I know that this new generation of local farmers will succeed in producing the best quality ingredients that restaurants can be proud to use and feature. I know because these are the same attributes that a chef must have to succeed as well!

What are some of your hopes for the future of homegrown produce?

Taste & Dine is a series of dining events brought to you by Backyard Productions in collaboration with the best restaurants in Singapore to highlight our homegrown produce. By working together with chefs to create a menu that uses locally grown and farmed produce, Backyard Productions aims to bring our homegrown gems to the forefront of the industry, making it accessible for all.

From 16th October to 30th October 2021, Taste & Dine will be happening at Alma by Juan Amador. A delectable lunch menu of dishes specially curated by executive chef Haikal Johari features the best of Singapore-grown and farmed produce.

All guests will also receive a complimentary bag of “Singapore Salad” by Backyard Productions with a Special Dressing by chef Haikal Johari to bring home upon the end of the meal.
